Da li je moguće da se vidi koje je polje na nekom dokumentu izmenejno kao i korisnik koji je menajo to polje?

Da, pod uslovom da ste uključili logovanje promena.
Zaglavlja dokumenata, uključite nad tabelom tHE_Move, kreira se tHE_Move_UNDO gde se čuvaju predhodni sadržaji tabele pre brisanja ili promene sa informacijom kad i ko je to uradio.
